There's nothing better to me than a nice warm hearty bowl of soup for dinner when it is cold and dreary out. I have been testing new recipes on my family because I have changed my way of eating to help me loose weight. This way of eating (South Beach Diet) really isn't that new to us. We have basically been eating like this all along, I just needed to change a few things. I think that is why I have had great success using this program to help me loose weight. I am now down almost 38lbs.
Anyway... the soup that i made on Sunday was just that, SUPER! The kids loved it and hubby loved it. It was a winner all around.
Rustic Tomato and Lentil Soup
*as much garlic as you want
1 medium onion, diced
3 medium carrots, diced
2T olive oil
2 stalks celery, chopped
6 C vegetable stock
1 28oz can tomatoes
2 C cooked lentils
1 cup whole wheat pasta
In large pot saute garlic, onions and carrots until translucent. Add celery, stock, tomatoes, lentils and salt and pepper to taste. Bring to a boil, reduce heat to low and simmer 20 minutes or until carrots are tender. Add pasta and simmer 10 more minutes until pasta is cooked.
This is such a versatile soup that you could substitute beans for the lentils or leave the pasta out and it would still be delish. Also in my opinion it could have used a bit more tomatoes.
