So yummy the kids can't tell they are "diet" recipes, recipes.

I have been workin' the South Beach Diet now since July. I am happy to announce that I have lost almost 40lbs. This diet isn't so much a diet but a way of life. Gotta eat the good carbs and good fats During the summer months it was very easy. We normally eat lots of grilled meats, garden fresh veggies and crisp, crunchy salads. However with cold weather upon us my body craves something a little more substantial, something cozy and warm. Some searching on the internet to find something a little different and i came up with a menu for the week.

For breakfast for myself I found a faux french toast recipe. I love me a good stack of french toast with syrup. Oh so yummy. The only other recipe that i have tried that was new was a black bean soup. It was easy and dinner was done in 10 minutes. Everyone loved the soup, even the increasingly picky 4 yr old.

South Beach style french toast
4 whole eggs
4 egg whites beaten until very frothy
1/2 cup ricotta cheese
1T splenda (more or less to taste)
splash of vanilla and sprinkle of cinnamon (again adjust to your taste)

mix all together pour into 8x8 baking dish sprayed with cooking spray. Bake at 350 until golden, about 30 mins.

I cut into 4 squares and drizzle 1 with sugar free syrup.

Paired with half grapefruit and coffee, this makes for a tasty and filling breakfast.


Black Bean Soup

1/2 cup favorite salsa
1 can black beans, rinsed and drained
1/2 can chicken broth (i added about 1/2 cup water as well)

heat salsa in soup pot about 5 mins. Add chicken broth and beans. Heat through. Either with an immersion blender or scoop about half of soup out, puree and add back to pot.

Top with reduce fat sour cream and 2% cheese.

serves 2.

I had to double it to feed our family. I added a bit of water as well so it wasn't "pasty"

I know I will try the soup recipe...I love easy. The french toast looks good too. Is it four servings?

According the to ladies on the SB board on ivillage the french toast isn't limited because neither eggs nor ricotta is limited. I did eat it as 4.. ok 3 servings. I ate 2 pieces the last day cuz it was so yummy and i was really hungry.
